Eggplant Salad

Eggplant (steamed or grilled )
Chopped onions and tomatoes
Spicy vinegar for dressing
Thin slices of seaweed and Chopped cilantro for garnish
Salt and pepper to taste

Using fork, mash steamed or grilled eggplant. Add chopped onions and tomatoes. Then, add spicy vinegar, and season with salt and pepper. Mix. Add thin slices of seaweed and chopped cilantro for garnish.

Stuffed Portabella Mushroom

1. Sautee chopped garlic and onions until brown or caramelized.
2. Add lean ground chicken ( or any ground meat ), stir until cooked.
3. Add cubed firm tofu ( optional ) and cubed stem of mushroom.
3. Stir to mix. Turn off heat.
Scoop filling into portabella mushroom. Cover with grated cheese. Top with sliced onion ant tomato. Partially cover with grated cheese again. Bake until cheese is melted. Enjoy!

Our Failed December Nights and Skipping Parking Fee in Downtown San Diego

We seldom go to downtown San Diego during the weekdays and Saturdays because of parking fee, which is from $10-$20. For us, why pay the parking fee when we could park for free on Sundays? However, last Saturday, our plan to witness the "December Nights", San Diego's premier holiday festival at Balboa Park failed. For 2 weekend nights ( December 7 and 8 ), the Balboa Park museums opened their doors free of charge in the evenings. The revelers could watch top-notch musical and dance performances, participate in multicultural experience, enjoy diverse food, music and entertainment from around the world. We thought that by coming to Balboa Park at about 2 pm is early enough since the December nights won't start until 5 pm! However, when we got there, there was no more parking available, not even by the San Diego Zoo's parking lot. We hated to drive around just to look for parking, so we decided to skip the event this year and hopefully see it next year by starting at Balboa Park early in the morning, since we can always explore the San Diego Zoo first.

Forever Fall

San Diego has a very mild weather, it is like forever fall and forever spring with surprises of summer from time to time. Winter exists only in the nearby mountains. It has been said there are only a few places on Earth where one can go snowboarding/skiing and surfing in one day, San Diego is one of them. Anyway, here are some fall colors I took using my cell phone today, December 7.

Pictures above were from my school, actually, a few steps outside of my classroom. You may notice the building in the 2nd picture, that's the science bungalow, and where my classroom is.

It is a Jollibee Joy Forever!

One of the temptations where I work is that it is close to Mira Mesa, one of the bigger Filipino communities in San Diego. After school, I have to resist the urge to stop for a Jollibee Chicken Joy and palabok fiesta, or for Red Ribbon Dinuguan and puto, or for Chowking taho, or for Goldilocks halo-halo and fresh lumpia, or for kare-kare, bopis, etc in any of the Filipinoo fastfood restaurants in the area.
