The Reason for The Season

If there is one thing that pastor Ed Young Jr is passionate about during the Christmas season, it is helping people remember the real reason for the season. All too often, people get wrapped up in the buying of gifts and the consumerism of the holiday, letting it overwhelm them. They start to think about nothing but who has the most Christmas lights on the tree or what types of gifts they are going to get. They spend more time talking to their children about Santa Claus and his elves than they do talking about what the holiday was established to help people remember: The birth of Jesus Christ.

There are many problems with this worldly outlook during what should be such a spiritual time, but one of the main issues is that people create a lot of stress and anxiety for themselves. If you are spending all of your time agonizing over what you should give or what you will get, is this really a joyful time of year? Do you really feel relaxed and happy when you are fighting your way through the crowds to try to get that last item on your list, only to find that someone else just grabbed it?

How's your Christmas? Hope you all had a wonderful one, celebrating the birthday of our Savior, Jesus Christ.  Although I did not have any Christmas wish list, but I was overly showered with priceless gifts that my heart can't stop from joyfully singing and rejoicing. As they say, as we grow older, we don't carry wish list anymore, for our wishes are those that cannot be bought.

Though without any material wishes, but GOD knows our hearts better than we do! I could almost cry from joy and happiness for all the gifts I received this Christmas from HIM. It's really a wonderful treat. My heart is exploding with sheer happiness, joy, thanksgiving and praise.

My heart beats for a drum beat

Latin and Reggae music have a distinct sound which is very upbeat, so to say. And no Latin or Reggae band would be complete without the Conga. The solid tones produced by this barrel like instrument are unique it itself. Always the inquisitive type, I signed up for some lessons. It was not difficult to learn how to play it! All you need are good fingers and strong wrists and elbows. However, the quality of sound does not only depend on the mastery of strokes, it largely depends on the quality of the drum head. My mentor taught me on how to choose the best quality drum head and we looked at an lp drum at Musicians Friend. Made of genuine rawhide, these drum heads are handpicked for texture, thickness and resiliency to produce those distinct sounds. I'm learning so much and soon I'd be up onstage with a reggae band.

Savings That Goes a Long Way....Upromise

In how many ways can we save? I can go list the many ways we can save money, but instead, let me take this time to share with you one of the values that my parents had strongly planted in my heart and in my mind.

My father was an above average white collared employee, and my mother was a full time housewife. There were 6 of us kids, who are 2 to 3 years apart. Considering that education in the Philippines was more than a privilege than a right, with how my and my brothers' ages were so close to each other, it was very hard for others to imagine, even those who had bigger income than my father, how my parents were able to fund all our college education.

I still very much remember a few days before my 7th birthday when my mother told me we are going to a bank to open a savings account in my name. The words of my mother echoed strongly up to this date: " 'day, we are not rich and we can not spend carelessly. My priority, and your tatay's, and hopefully, yours one day, is to save for your college education. If ever we did not give you grand birthday party before, because we thought you were still young to remember the memories and make choices for yourself. Now, that you will be turning seven years old a few days from now, I would like you to know that the money we could have spent for your birthday parties were all saved. It is about time we transfer your "birthday parties" money to your account, in your name. Where slowly, you will make guided decisions in your life, because we want you to grow up knowing the importance and value of savings. Now that you'll be able to remember more memories and probably know more which you could appreciate, you have the option to choose whether to have a real birthday party, or add the birthday party money to the savings account we will open for you which were saved from all your unspent birthday parties."

 I asked my mother before making the decision if I would still get a new dress, a new pair of shoes and if she would still make me sweet rice porridge in coconut milk (ginatan), cassava fritters with shrimp (okoy), and noodles (pancit).

Holiday Cruise Vacations

Are you interested in Royal Holiday cruise vacations, but are you still trying to figure out the best way to get a good price on your trip? Overall, it is important to note that cruises are some of the most economical trips you can plan. You get to go to multiple destinations, which could cost thousands more if you were to buy plane tickets to each one. Your lodging, drinks, and food are all rolled into one, giving you a lower overall price than you would be able to get if you had to buy each one on its own. That being said, there are a number of things that you can do to reduce the cost even more.

1. Book the cruise as far in advance as you can. As the cruise sells out, the price for the ticket is going to go up because there is a finite amount of room. This is similar to how the price of a plane ticket jumps as the plane fills up. The demand for just one ticket that remains is different than the demand when there are hundreds of tickets, and the price reflects this. Be one of the first buyers to get the initial, low cost.
2. Book the cruise at the very last second. Conversely, you could try to wait until the very last second and then book your trip. Sometimes, the cruises are not going to sell out. If only 75 percent of the cabins are full, the ship is still going to leave port. It is going to cost the company almost exactly as much as it would to travel with a full load. Therefore, they would rather sell those last-minute tickets off cheaply, taking a little money to offset the costs instead of nothing at all. This is a gamble, though, because you will not get a spot if it does sell out and there are not any left.

3. Book at the port closest to your home. You do have to pay to get to the port city, so that is an additional cost for any cruise. If you book with one that is close to home, you cut down drastically on that cost. Alternatively, you may find cruise packages that include your flight, making things even more affordable and possible. Even with these packages, choosing a nearby port is going to be a better financial move than flying halfway around the world.

4. Buy from someone else who cannot go. Sometimes, you can find tickets being sold by people who bought them and then discovered that they could not go - perhaps they got a new job in a different country, for example, and they cannot take the time off. They might be able to give you a good deal just so that they do not have to waist the whole cost of the ticket.

5. Go to places that are not in high demand. There are great cruises all over the world, but a few destinations eat up most of the demand. People hear about these the most and always want to go there. Because of the high demand, the prices are higher, but a cruise to a less popular destination could be just as fun, despite a much smaller overall price tag.

Brussel Sprouts and Chanterelle Mushrooms

Perhaps, one of the reasons we always have vegetables at home is because they are easiest to make. I do not have to worry about thawing frozen chicken.
How I made the Brussel sprouts and chanterelle mushroom above? I simply sauteed them in extra virgin olive oil with lots of garlic! Then, I seasoned them with black pepper.  It's yum! Yummy, healthy and easy to prepare! Now, who says fast food is unhealthy?  I made the dish in a matter of minutes! Fast, for someone like me who goes home hungry and ready to eat!

This food is low in Saturated Fat, and very low in Cholesterol, and a good source of Protein. It is also a good source of Thiamin, Riboflavin, Iron, Magnesium, Phosphorus and Copper, and a very good source of Dietary Fiber, Vitamin A, Vitamin C, Vitamin K, Vitamin B6, Folate, Potassium and Manganese.

Lucia Lodge, Big Sur

During our Big Sur and Monterey Bay 5 days Thanksgiving Week Vacation, we stayed at Lucia Lodge, which sits atop the ocean cliff offering a magnificent vista of the dramatic Big Sur coastline.

Big Sur does not have many hotels, and the cost of stay ranges from $150- $2,000 per night. Among the very few hotels, there are only three or four that sit by the cliff offering a stunning vista of Big Sur coastline. One is Ragged Point Inn, price range of its cliffside rooms is from $150-$500 per night for 2 persons.  Ragged Point Inn however is way too South for our targeted activities. The other one is Post Ranch Inn, the cost of stay ranges from $700-$2,000 per night. Thankfully, we were able to reserve at Lucia Lodge, a more simplistic hotel than Post Ranch Inn, where the cost of stay ranges from $200- $350 per night. Comparing to Post Ranch, staying at Lucia Lodge is a steal! All rooms at Lucia Lodge is strictly for 2 persons only. If there are more than 2 in the family, you would have to get several rooms, which means you would have to pay at least $400/night for 3-4 people and at least $600 per night for 5-6 people. 

All hotels in Big Sur have no TV, and no cell phone signal. We love it that way since staying in Big Sur is a true escape from civilization, offering you the pure sounds and sights of nature.

All Big Sur hotels used to not offer internet until about 2 or 3 years ago. These days, they do provide wireless internet served by satellite. Big Sur accommodations usually are filled very quickly, that advanced reservations usually is needed. There was only one room available when I made advanced reservations at Lucia Lodge. Thankfully, the one room available was the cheapest one, at $200/night (with tax) because it has partial ocean view only. As you could see from our window, you would see the cars parking first. :) But it was okay, since the best sunset viewing is on top of the hill, where everyone, including those with full ocean view paying $100 more still had to walk to the top of the hill to experience a better sunset. :) Life is very much fair after all! :) The room has private bathroom, equipped with heat and a queen sized bed, good enough for two people. Above all, though the room may be very basic, but it smells clean, looks clean, feels warm and the bed is comfortable.

What I like about Lucia Lodge is that they have trails from the hotel. Not really major trails, but short trails that lead to the top of the cliff. The top of the cliffs is their recommended point for sunset viewing. For me, the top of the cliff, which is just a short hike uphill from the lodge, is the BEST LUXURY Lucia Lodge offers that could not be found anywhere.

It also has short trail that connects to the lower cliffs, where we could hear more the sea lions and see the playful sea otters. However, I was not able to capture sea otter from Lucia Lodge grounds up close since we were at the top of the cliffs, but nevertheless, it was a joy watching them from above. Below however is a picture of the sea otter enjoying life and food (fish ) I took from Monterey Bay.

Lucia Lodge also has a restaurant, serving not only guests but also visiting passersby of Big Sur. There is also a trail that connects the restaurant and the lodges, however, for those who prefer a short walk, can take the road instead. We love walking by the cliffs, so we take always the little trail that connects the restaurant and the hotel.

That's sample dinner above ( my portion only, since I think I deleted accidentally some of the food pictures from my cell phone ). Hubby and I usually just order one dish each, with no appetizer and dessert at Lucia Lodge. A single dish usually cost from $25-$55. Of course, hubby and I are not in Big Sur for foods but for nature, so our dinner bill for the two of us usually is only $60. Maybe, we always had the lowest dinner bill among the guests there, since other guests would have appetizer, wine, dessert, etc. If we would have appetizer, dessert and wine, we would pay maybe $150-$200 for dinner alone, for both of us.

A Big Sur vacation is not about staying in the grounds of hotels such as enjoying swimming in the pool. It is about getting out and exploring nature. Most of the hotels in Big Sur, such as Lucia Lodge do not have swimming pool. Exception would be Post Ranch Inn ($1,000-2,000 per night) and Ventana Inn ($800-$1,000 per night). A $200/night stay at Lucia Lodge has no luxuries but a private bath, heater and comfortable bed to sleep in for the tired hikers and explorers. :) Four nights at Lucia Lodge is $800, which is even less than half of one night at Post Ranch Inn. :) Most Big Sur hotels offer only basic accommodations, so that guests could focus more on the amazing nature.
Comparing the cost of our Big Sur stay to our $75/night at Mandalay Bay, one of the top luxury hotels in Las Vegas, which came with luxurious breakfast buffet, cabana credits for some free drinks at the swimming pool and spa, discounts to Lion King and Cirque du Soleil, a $200/night in a very small room in Big Sur without the usual amenities may sound expensive compared to the luxury filled $75/night at Mandalay Bay and/or Four Seasons Hotel. But comparing Lucia Lodge in Big Sur to summertime of Yosemite National Park, where a $200/night would mean a tent cabin only and cot beds, no private bathroom, a Big Sur vacation would sound cheaper.

There are some hotels in Big Sur that offers some luxuries found in most city hotels such as spa, heated pool, but you'd have to pay $700-$2,000 per night. Though Big Sur hotels and most National Park hotels may be pricey and lacking in luxuries but they offer a rich natural experience that is very relaxing and healing, something that city hotels don't have. I guess that's the reason why usually city hotels that have the same amenities as wilderness hotels are a lot cheaper because they do not have the AMAZING NATURE to offer. There's no Lion King nor Cirque du Solei in Big Sur, but there is the whale king! :)

In terms of outdoor activities, Lucia Lodge is very strategic. It is very close to Limekiln State Park and Julia Pfeiffer Burns State Park, two natural jewels in Big Sur.

A Big Sur vacation will change the way most of us see vacation, it is about getting a deeper experience with nature. Big Sur showcases amazing coastal wilderness,  incredible marine and land biology, magnificent geology and exemplary thermodynamics. The culture here is defined by how God manifests its supreme artistry in mingling wilderness with natural beauty. It's a place where learning and appreciating nature comes together.

Would I come back to Big Sur again for another vacation? DEFINITELY! The video below will explain why ( some of you may have seen it already in my other blog). 
Big Sur is one of my favorite places for a nature get-away in California. Would I go back to Lucia Lodge? Definitely as well, if it would just be I and hubby. However, there are times family joins us, so, we would get bigger room for family, and Lucia Lodge would be more expensive for family. For a more affordable cost for family lodging, Big Sur Lodge ( but no ocean view, it is inside Big Sur State Park in the middle of the redwoods forest) would be the best choice.

Wearing Fine Jewelry

Tidepooling, Not A Place to Wear Fine Jewelry

What if you have a fine jewelry as priceless as Scott Kay engagement ring? Would you wear it to the beach? Would you wear it hiking? I hope not. I and hubby had learned our lesson wearing jewelry, as we both lost our wedding ring to the surf. My mom in law bought us again another pair of wedding ring, but this time, we decided not to wear them, instead, we just keep the rings in a very safe place. We both are very much into outdoors, somewhere we probably do not want to expose our fine jewelry to. Sand and saltwater can scratch and erode the finish and polish of gemstones and soft precious metals. As much as we want to keep wearing our fine jewelry, but we do not want them to be exposed to chemicals in swimming pool and salt water in the beach. For active people, wearing fine jewelry is not often a choice for necessity. There is a place and a time to wear fine jewelry, definitely, not during washing dishes when the jewelry is exposed to the harsh chemicals of detergent. Not during hiking or rock scrambling, where the rock surface may scratch the jewelry.
Wait for the right occasion to wear your priceless fine jewelries and take care of them, as most probably they were given to you lovingly.

Malunggay Leaves ( or Moringa in English)

Malunggay is one of my favorite Filipino vegetables. Some wonder why I continue to eat Filipino vegetables when there is already an abundance of American vegetables such as broccoli, lettuce, etc, vegetables that are considered "special" in the Philippines. My response always is: I am into diversity, but most of all, I love the taste of home, something I can never give up. Filipino vegetables are my comfort food! But unlike most comfort foods, my kind of comfort foods come with a MEGA-BONUS, they are packed with nutrition.

Scientific research confirms malunggay leaves are a powerhouse of nutritional value. Gram for gram, malunggay ( or moringa in English ) leaves contain:
SEVEN times the vitamin C in oranges,
FOUR times the Calcium in milk,
FOUR times the vitamin A in carrots,
TWO times the protein in milk and
THREE times the Potassium in bananas.

Aside from those mentioned, malunggay contains more than 90 nutrients and 46 types of anti-oxidants. It also is rich in Omega-3. I look at the table of nutrients of food, and happy to see the superior quality nutrients in malunggay gram per gram since this is the kind of vegetable that grows easily in the Philippines. I practically grew up without lettuce nor broccoli in our table, because we mostly eat home grown vegetables. I grew up with malunggay, saluyot, etc, almost everyday! And hey, they are packed with a lot more nutrients gram per gram than the "imported vegetables" in the Philippines. Though I must say, here in America, "malunggay" is now the imported one and the more expensive one. But whenever I buy it, I consider it in so many ways:
1. It brings me the simple joys of home, back when I was young.
2. It is very nutritious and perhaps the healthiest green leaf there is on Earth, why would I give up on it just because I am now in lettuce and broccoli land? Though don't get me wrong, I love broccoli too ( I have learned to love it here in US since it is very easy for me to get it, and also, cheaper than Asian vegetables, and healthy too ). I practically eat all vegetables! I don't think there is any vegetable that I can't eat. :)
3. I support Filipino/Asian farming, though most probably, the malunggay I get here in California, are from California farms. You see, California somehow is just successful in growing Asian vegetables and fruits, though they were not successful with mangoes.

Making My Own Music?

Making My Own Music? Hmmm, I wish! HAHA! If I only know how to play a guitar and could sing very well, I would no doubt create my own music. I probably would buy synyster gates at musicians friend to create a high quality sound.

Why this wishing of creating my own music lately? Because I am hooked in video and I love inserting music into the videos. However, we are not that free to add any music to our videos because of copyright laws. I learned that when I thought because I am using the album of U2's Joshua Tree I bought, I could use the music "Desert Sky" into the video. But when I uploaded, I got a strike one in youtube, warning me that U2's music is copyrighted, and that if I get three strikes, I would be banned from youtube! Oh no, I do not want to be banned! So, starting that time, I was too careful in choosing music that do not have copyright laws. Like the video below, the music, "Simple Life" is from Karl Kohlase who shares his songs for free to spread the love of Christ. So, I changed my Joshua Tree video's background music from "Desert Sky" by U2 to "Simple Life" by Karl Kohlase. "Simple Life" by the way is one of my favorite songs. Selfie with a point and shoot Camera

One of the advantages of using a point and shoot camera is that it is very easy to take selfie shots. though am not into selfie shots because I do not believe in having a face that could launch a thousand ships, :). But there are times I am inspired enough to include myself in the picture of places with beautiful scenery. Though I am very much a DSLR user ( I feel more satisfaction when I use dslr), but I have been using a lot of point and shoot camera and cell phone lately to take pictures because of their ease in using. And it is also easier to take videos with a point and cell phone compared with dslr, which is very challenging without a tripod. Anyway, here is the picture of the above scenery without my selfie. Pardon for that selfie shot, haha!
